Bincho-Don, Island-Focused Takeout Concept, Set to Open at Easton Public Market

Easton Public Market (325 Northampton St, Easton, PA 18042) will welcome a new vendor this February with the opening of Bincho-Don, an island-focused takeout concept from chef Kadon that brings globally inspired comfort cuisine to the former More Than Q space.

The new eatery will take over the stall previously occupied by More Than Q, one of the market’s original vendors. After nearly a decade at Easton Public Market, pitmaster Matt Martin elected to close his Easton location, passing the space — and its smoker — to Kadon as the next chapter unfolds.

While Caribbean cuisine anchors the menu, Bincho-Don draws from a broader range of island influences. Kadon’s cooking reflects flavors and techniques inspired by Caribbean, Guyanese, Roatán (Honduran), and Filipino cuisines, along with other island cultures from around the world. The concept is modeled after traditional Caribbean takeout spots, featuring rice-based plates paired with carefully prepared proteins, bold sauces and comforting sides, designed for the fast-paced food hall environment.

Kadon brings more than 12 years of professional kitchen experience to the venture, having worked his way from dishwasher to executive chef. Easton has become home for the chef, and the opening of Bincho-Don marks a significant milestone in his culinary career.

“I’m incredibly excited to bring Bincho-Don to the Easton Public Market,” Kadon said. “The concept is inspired by the island foods I grew up around — Caribbean, Guyanese, Honduran and Filipino — and the way those cultures use rice, fire, spice and time to create comforting, soulful meals. EPM feels like the perfect place to build something community-driven.”

In addition to its globally influenced menu, Bincho-Don will focus on collaboration within the market, sourcing from regional farmers and producers when possible and working alongside fellow vendors to create a welcoming, casual dining experience rooted in comfort food.

“It’s a sad farewell to Matt and More Than Q, having worked with him since the very beginnings of the market,” said Jared Mast, executive director of the Greater Easton Development Partnership, operator of Easton Public Market. “But we’re excited to welcome the next chapter for that space with Kadon and to see the new flavors he brings to the market and to Easton.”
